crazy food: chicken parmesan

every time i eat this it tastes better. its a no fail, go to, recipe that is just "that good". it always impresses and is ridiculously easy.



chicken parmesan 

4 tbsp olive oil
1 chopped onion
5 cloves garlic, minced
1 can (28 oz) crushed tomato 
1/2 tsp black pepper
4 boneless, skinless, chicken breasts
1/2 cup italian breadcrumbs
1/3 cup parmesan cheese 
1 beaten egg
1/2 cup shredded mozzarella cheese (i end up using less)

optional, 2 cups cooked noodles, i use quinoa elbow noodles 

preheat broiler to 500 degrees. 

in saucepan heat 2 tbsp oil over medium heat. add diced onions, garlic, cook until tender. add crushed tomatoes, pepper, simmer on low heat. 

pound chicken breast to 1/4 inch thickness. dip in beaten egg. combine breadcrumbs and parmesan cheese. dredge chicken in mixture. add 2 tbsp olive oil to a heated cast iron skillet. cook on medium heat, until chicken is cooked through. 

in a baking dish poor tomato sauce over noodles (if noodles are desired) place chicken on top, sprinkle with mozzarella cheese (a little goes a long way). place under broiler until cheese is melted. 

enjoy!  garnish with fresh tomatoes, pair with a salad. you will not be sorry you attempted this recipe.
